Spicy Beef Taquitos

Spicy beef taquitos are a delicious Mexican dish made by rolling seasoned ground beef and other ingredients in corn
tortillas and then frying them until they are crispy and golden brown. They are typically served as an appetizer,
snack, or part of a larger meal. Here’s a basic recipe to make spicy beef taquitos:

Ingredients:

1 pound ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper (adjust for desired spiciness)
Salt and pepper to taste
1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
12-16 small corn tortillas
Vegetable oil for frying
Sour cream, salsa, guacamole, or other condiments for dipping (optional)

Instructions:

In a large skillet, cook the ground beef over medium-high heat until it’s browned and crumbled. Drain any excess fat if necessary.
Add the chopped onion and minced garlic to the skillet with the beef and sauté for a few minutes until the onions are translucent.
Stir in the chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Cook for another 2-3 minutes to let
the spices infuse into the meat. Adjust the spiciness to your taste by adding more or less cayenne pepper.
Preheat your oven to 200°F (93°C) to keep the taquitos warm while frying.
Warm the corn tortillas in the microwave for about 20 seconds to make them more pliable.
Place a small amount of the seasoned beef mixture and a sprinkle of shredded cheese on each tortilla, then roll
them up tightly. Use toothpicks to secure them if needed.
In a large skillet or deep fryer, heat enough vegetable oil to submerge the taquitos to around 350°F (175°C).
Carefully place the rolled taquitos into the hot oil, seam-side down, a few at a time. Fry them until they are
golden brown and crispy, usually about 2-3 minutes per side.
Remove the fried taquitos with a slotted spoon and place them on a paper towel-lined plate to drain any excess oil.
Keep them warm in the preheated oven while you fry the rest.
Once all the taquitos are cooked, serve them with your favorite dipping sauces, such as sour cream, salsa, guacamole, or hot sauce.
