Homemade Enchiladas Suizas

Enchiladas Suizas is a delicious Mexican dish that consists of corn tortillas filled with chicken,
covered in a creamy tomatillo sauce, and baked with melted cheese on top. Here’s a homemade recipe for Enchiladas Suizas:

Ingredients:

For the Enchiladas:

2 cups cooked chicken (shredded)
12 corn tortillas
1 cup shredded Monterey Jack or Swiss cheese
1/2 cup sour cream
1/4 cup chopped fresh cilantro
2 tablespoons vegetable oil
Salt and pepper to taste

For the Tomatillo Sauce:

1 pound tomatillos, husked and rinsed
1/2 cup white onion, chopped
2 cloves garlic, minced
1 jalapeño pepper, seeded and chopped (adjust to your preferred level of spiciness)
1/4 cup chopped fresh cilantro
1/4 cup chicken broth
Salt and pepper to taste

Instructions:

For the Tomatillo Sauce:

In a saucepan, combine the tomatillos, chopped onion, minced garlic, and jalapeño pepper. Cover them with water,
bring to a boil, and simmer for about 10-15 minutes until the tomatillos are soft and have changed color.
Drain the tomatillo mixture and transfer it to a blender or food processor. Add the chopped cilantro,
chicken broth, and season with salt and pepper. Blend until you have a smooth sauce.

For the Enchiladas:

Preheat your oven to 350°F (175°C).
In a large skillet, heat the vegetable oil over medium heat. Briefly heat each corn tortilla in the oil,
just for a few seconds on each side, to soften them. Place them on paper towels to drain any excess oil.
In a mixing bowl, combine the shredded chicken and half of the tomatillo sauce. Mix well to coat the chicken.
To assemble the enchiladas, place a spoonful of the chicken mixture in the center of each tortilla, roll them up, and place them seam-side down in a baking dish.
Pour the remaining tomatillo sauce over the rolled enchiladas.
Sprinkle the shredded cheese evenly over the top of the enchiladas.
Bake in the preheated oven for about 20-25 minutes, or until the enchiladas are heated through, and the cheese is melted and bubbly.
Remove the enchiladas from the oven and let them cool slightly.
Drizzle the sour cream over the top and garnish with chopped cilantro.
