Whoopie pies
Whoopie pies are a classic American dessert that originated in the northeastern United States, particularly in the New England region.
They are often described as a cross between a cookie and a cake, creating a delightful sandwich-like treat.

Ingredients:
For the Cookie/Cake Layers:
2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
1 cup buttermilk
For the Filling:
1/2 cup unsalted butter, softened
1 cup confectioners’ sugar (powdered sugar)
1 1/2 cups marshmallow creme or fluff
1 teaspoon pure vanilla extract
Instructions:
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a mixing bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
In another bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and mix until well combined.
Alternate adding the dry ingredients and buttermilk to the butter mixture, starting and ending with the dry ingredients. Mix until the batter is smooth.
Drop spoonfuls of the batter onto the prepared baking sheets, creating rounds about 2 inches in diameter.
Make sure to leave some space between them as they will spread while baking.
Bake for 10-12 minutes, or until the tops spring back when lightly touched.
Allow the cookie/cake rounds to cool on the baking sheets for a few minutes, then transfer them to a wire rack to cool completely.
While the cookie/cake rounds are cooling, prepare the filling. In a mixing bowl, beat together the softened butter,
confectioners’ sugar, marshmallow creme, and vanilla extract until the filling is smooth and creamy.
Once the cookie/cake rounds are completely cooled, spread a generous amount of the filling on the flat side of one round,
and then top it with another round, creating a sandwich. Press gently to adhere the two halves together.
Repeat this process with the remaining rounds until you’ve assembled all your whoopie pies.
Whoopie pies come in various flavors, but the classic version features chocolate cookie/cake layers and a sweet, marshmallow-based filling.
However, you can get creative with different fillings and even add-ins like chocolate chips or sprinkles for added variety and fun.
